With more than 15 years in fine dining and luxury hospitality, Chef Ricky Biswas brings global experience and an unwavering respect for craft to Roth’s. His journey began in France, where he trained under Meilleur Ouvrier de France and Bocuse d’Or winner Franck Putelat — lessons in precision and purpose that continue to guide his cooking today. He went on to refine his skills in some of America’s most celebrated kitchens, including The French Laundry, Coi, and PRESS, where creativity met discipline at the highest level.

At Roth’s, Chef Biswas brings his journey full circle — from the rigor of classical training to the creative freedom of his own kitchen. Each menu is an expression of where he’s been and what he believes: that mastery is nothing without meaning, and that a meal should speak to the soul as much as the palate.

Stewart Prato

Stewart Prato brings over two decades of experience at the highest levels of wine and hospitality, shaping a leadership style defined by precision, intuition, and an unwavering commitment to excellence. Raised in California’s Central Valley near Lodi, his connection to wine began among the vineyards—an early foundation that continues to inform his approach to both service and storytelling.

His career has taken him through Michelin-star dining rooms, Private Clubs, and Gordon Ramsay’s flagship restaurant in Los Angeles, where he developed a philosophy rooted in detail, anticipation, and the belief that true luxury is felt, not declared. Stewart pairs this with a formidable academic and professional background, holding an Executive Certificate from the Mendoza School of Business at the University of Notre Dame and credentials including Certified Sommelier, Certified Wine Educator, and French Wine Scholar. He is also among a select group of Certified Bordeaux Educators in the United States.

Stewart has also served in leadership roles for some of the biggest distributors and suppliers in the Wine and spirit business. His work extended beyond distribution into education, partnership, and the cultivation of enduring relationships across the industry. A respected voice in the global wine community, Stewart Prato has been a frequent speaker and moderator at premier food and wine events, where he brings both depth of knowledge and a refined, engaging presence.

As General Manager, he leads with quiet confidence and exacting standards—crafting an environment where every element is intentional, every gesture is meaningful, and each guest experience unfolds with a sense of effortless sophistication.

The Wine

Roth's Cellar Selection

Every great wine begins with a story — this one starts with a friendship and a shared devotion to heritage. Our General Manager, who brings deep expertise in wine development, joined forces with Gagnon-Kennedy Vineyards, a Napa Valley estate rooted in the region’s earliest viticultural traditions. GKV specializes in crafting wines from historic vineyard sites, including some planted as early as the late 1800s — plots chosen deliberately by the earliest settlers for their exceptional terroir.

Guided by a philosophy that values purity, elegance, and tradition over fads, GKV draws from these storied vineyards to create wines that showcase Napa Valley’s legacy in each sip.

Founder’s Cut No. 1

As the inaugural release in our Roth’s Cellar Selection, Founder’s Cut No. 1 is a 2023 vintage, custom-blended by our General Manager and GKV: a Cabernet Sauvignon-based blend, aged exclusively in a single barrel crafted just for Roth’s. Available by the glass for $45 or by the bottle for $225, this wine reflects both Napa’s timeless legacy and the intentional vision behind Roth’s beginning — a rich, singular expression of excellence and storytelling in every pour.
